Saigon Noodle opened its doors in Saint John in 2006 to become the first Vietnamese restaurant in the city. The owners previously ran a Vietnamese restaurant in Toronto, Ontario. Unlike many types of Asian food, Saigon Noodle prides itself on cooking its dishes using small amounts of canola oil and using lean cuts of meat to minimize cholesterol levels.
Vietnamese food is very flavorful and distinctive from other Asian foods. It employs a variety of fine herbs and lemon grass to season many of its dishes. The dishes range from mild to very spicy, and there is commonly a a wide selection of vegetarian dishes.
